Thank you for this informative post. I had pretty much settled on the 800 36" but your comments about the Benchmark and its flexible cooking zones have intrigued me. I must say, however, that Bosch doesn't do a great job of explaining it and even after reading this I still have a critical question. How do you control two different pots on the single zone? Do they have to be at the same heat level? Or does something light up representing each pot so that you can control them independently?

Thanks for your reply.

Thanks for the very detailed post. Just one thing, I looked at the HD9220 manual (as linked in the Amazon product listing) and it said the basket and pan are dishwasher safe. Can you double check on that point?

Just got a sous-vide cooker and have a question. Nowhere in any information I've looked at is there any reference to accounting for the size/weight of the meat being cooked. Instructions say seal the meat, immerse in water at a specific temp and cook. Cooking times vary from 1 to 4 hours for the same degree of 'done-ness'. Is this suggesting that whatever size or thickness of a steak, for instance, it will be cooked to medium rare regardless of how long I leave it in the water at the prescribed temp? Seems contrary to all I know about other methods of cooking. Help, please.
Regards,
Brian.
